Lemon Blueberry Loaf Cake Recipe

     The weather is finally warming up here in New Jersey and I couldn't be happier. I'm finishing up school, getting ready to graduate, and then jetting off to Europe for two weeks. I've never been very good at baking, but I'm making an effort to try new things this summer. And so, after searching around the Internet and Pinterest for inspiration, I came up with this recipe for Lemon Blueberry Loaf Cake. To me, nothing screams spring and summer like fruit-filled baked goods and iced coffee. I picked up a bottle of Stumptown Coffee Roasters Cold brew Coffee from Whole Foods.

Loaf Cake:
1 and 1/2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1 cup plain greek yogurt
1 cup sugar
3 eggs
2 teaspoons lemon zest
juice of 1/2 lemon
1/2 cup vegetable oil
1 and 1/2 cup fresh blueberries

You Are My Sunshine, My Only Sunshine

     With Mother's Day coming up this weekend, I thought it would be a good time to do a post about my lovely mother, Alida. My mom is my best friend, my travel buddy, and just all-around my favorite person to do things with. As much as I love my friends, boyfriend, and other family members, there is something so easy about spending the day with your mom.
     We like to travel together quite a bit and in the last few years have been to Italy, Disney World (x3), California, and upstate New York. We also have a trip to Paris and London in a little over two weeks from now! Of course, with all of this traveling and exploring, we tend to do a good amount of eating and shopping together, but those happen to be two of my favorite things. No matter if it is a quick cup of coffee to a full meal or window shopping to a splurge-session, we have plenty of fun and enjoy trying new things together.
     Lush was having a Mother's Day contest recently (I believe it is still going on) where to enter, you had to comment on Instagram or tweet some advice your mom has given you. when I thought about what to comment, I realized how many wonderful things my mom has told me over the years. She has always tried to give me self-confidence, "Never let someone make you feel any lesser than you are," set my priorities straight, "It's not how you look on the outside that matters, it's what's on the inside that counts," and encouraged me to do my best in all things, "You can accomplish anything you set your mind to." So thank your mother this sunday, or any mother-figure you may have in your life, for all that she does. I personally can't wait to treat my mom to a nice, relaxing day filled with her favorite things.

I was supposed to run a half marathon but couldn't due to an injury, but my mom made sure we still had a great time and tried to hide everything running-related from me so I wouldn't be upset.
